2 cups dried sugar beans (soak overnight & then rinse)
2 onions - grated
2 carrots - grated
2 potatoes - grated
2 tomatoes - grated
1 smoked hock (eisbein) or smoked turkey
3T tomatoes concentrate
Salt & Pepper to taste
Thyme - fresh
Pressure cook for 45 mins, remove meat from bone (I discard the fat and
grizly bits). Or bring to boil, cover in a duvet for a few hours and then return to stove and cook until meat falls off the bone.
